The Legend of 1000 Islands Dressing -The many legends regarding the origin of 1000 Islands Dressing all seem to relate back to George Boldt, one-time owner of the Waldorf-Astoria in New York and the Bellevue-Stratford in Philadelphia. -The Dressing Legend: George & Louise Boldt and their family lived aboard their resplendent yacht while construction of their castle home on Heart Island was underway. One summer day their steward served a new and tasty dressing on the luncheon salad. Boldt was so impressed with its flavor that he decided to serve it at his hotels, naming it "1000 Islands Dressing" in honor of the beautiful area where it was first prepared. The steward was to become as famous as his new creation. He was promoted, and subsequently rose to international fame as Oscar of the Waldorf. -Oscar of the Waldorf: Oscar Tschirky, although he was known to the public simply and eloquently as Oscar of the Waldorf, was respectfully addressed by his associates as "Mr. Oscar." He was maitre d hotel at the first Waldorf-Astoria throughout its lifetime, from 1893 to 1929. The new Waldorf-Astoria opened on October 1, 1931, and in 1934 Oscar was listed among the executives as "host of the Waldorf-Astoria." Oscar s reputation and position are unmatched in hotel history. During his career he acted as official host to more celebrities and world leaders than any other living man has ever met. His outstanding supervision of the requirements of visiting royalty resulted in his being decorated by three foreign governments. As host of the Waldorf-Astoria he extended the hotel s hospitality to every President of the United States from Grover Clevelend to Franklin D. Roosevelt. His name is permanently coupled with the preparation of epicurean foods and the art of dining. Throughout his career he remained the modern personification of the traditional "Mine Host" of the old time inn. The Dressing Recipe: Here are two versions of the recipe: From "Ed of the Edgewood" (Ed Kearns of the Edgewood Resort, Alexandria Bay): Ingredients: 1/4 cup chopped pimientos, 1 tsp. Worcestershire sauce, 1/4 cup chopped pickles, 1/3 cup chopped green olives, 1 tsp grated onion, 1/2 cup mayonnaise, 1/2 cup sour cream, 2 chopped hard cooked eggs. Method: Combine ingredients in a bowl and add vinegar to taste if desired. Stir and refrigerate. makes approximately 2 cups of dressing. Seen on a Refrigerator Magnet in our office! (Source Unknown): Ingredients: 1 quart mayonnaise, 1/2 cup chopped olives, 3/4 cup relish, 1/4 cup vinegar, 3 hardboiled eggs (chopped), 1/4 cup Worcestershire sauce, dash of ground cloves, 1/2 cup diced red pepper, 1 tsp sugar. Method: Combine ingredients in a bowl and add vinegar to taste. Stir and refrigerate
