Roger Ouellette, owner and Executive Chef of Cuisine in Motion has a background in fine dining in and around the GTA. Over the years during his positions at North 44, Scaramouche, Canoe and Splendido to name a few he has learned the art of fine cuisine and service and that they must go hand in hand to ensure guests enjoy a complete dining experience and ultimately return. One of the greatest accolades Roger experiences is when his clients refer him to family, friends and colleagues. As he constantly strives to achieve the perfect experience for all his clients and their guests to know that they were completely satisfied confirms to him that the event was another job well done. Being part of any special event is a responsibility Roger takes very seriously. Shirley Ouellette, wife of Roger and his resident baker. Shirley grew up in the far south west of England. Her parents had a traditional pub in a little seaside town. During this time she was exposed to good traditional English food, including homemade pies, all manner of seafood and of course the sweet delights of cakes, pastries and those wonderful English scones with homemade strawberry preserve and clotted cream! Shirley s mum taught her most of the things she has learned about baking, but it was her part time job in restaurants and a banquet hall through school that piqued her interest in the more exotic. Shirley is the driving force of Cuisine in Motion s ever growing Hors D oeuvres list and the wonderful celebration cakes. As with Roger, Shirley s greatest pleasure at the end of an event is seeing their guests happy and relaxed enjoying their own party instead of spending the night in the kitchen. Now let s introduce Michaela their daughter and Cuisine in Motion s resident apprentice. Michaela is enrolled in George Brown s Food and Beverage Management course and will also be taking their Sommelier course to compliment her already growing knowledge of fine wines. Michaela works closely with Shirley to learn as much about baking and the creation of new Hors D oeuvres and to her credit has come up with many new and innovative ideas herself. Michaela also works with Roger to understand the business aspects of running a small company from end to end. Michaela has been working locally for a reputable chain restaurant to gain more knowledge of systems and training within a larger establishment. With her growing knowledge of the catering and restaurant business along with her formal training at George Brown, Michaela is sure to have a good rounded vision of fine food and wine exceeding the knowledge of most young people her age.
